The Challenge

This local restaurant called us in after failing a health inspection. The point of failure was the pump room behind the kitchen — a high-cleaning, high-moisture, back-of-house space where the floor met the wall in nothing more than a caulked or open seam at the base of the sheetrock.

In a commercial kitchen environment, that seam is the whole problem. Pump rooms, dish areas, prep lines, and walk-in pads get hosed and mopped constantly. Every cleaning cycle drives water straight at the wall-to-floor joint. Without a true integrated cove base, that water wicks into the bottom of the sheetrock, sits there, and over time produces exactly what the inspector was flagging: water damage, swelling drywall, hidden mold growth, and a non-cleanable corner that can never actually be sanitized.

This is one of the most common health-code failures we see in commercial kitchens, and it almost always traces back to the same root cause — the original build either skipped the integrated cove or used a stick-on vinyl base that lifted within the first year of wash-down cleaning.

Our Approach

Integrated cove base is something we specialize in, and it's exactly the right fix for a room like this. Unlike a vinyl wall base that's glued on after the floor is finished, an integrated cove is physically built up out of the same coating material that's going on the floor — a continuous, monolithic radius that runs from the floor surface up the wall four to six inches with no seam, no joint, and no place for water to enter.

We started by prepping the existing floor down to a sound, profiled substrate and prepping the bottom of the wall to bond. From there we hand-built the cove itself: a structural cove material troweled into a smooth, radiused transition where the floor meets the wall, then allowed to cure as part of the floor system rather than as an afterthought stuck on top of it.

Once the cove was in place, we coated the entire room — floor and cove together — with our commercial epoxy system. Because the epoxy goes on top of the cove base, the wall-to-floor transition becomes one continuous, fully sealed surface. Water hitting the wall during cleaning runs down the cove and onto the floor with nowhere to penetrate, and the bottom of the sheetrock is fully protected behind a coated, waterproof barrier.

The Result

The pump room now passes inspection on the exact point that failed it. The wall-to-floor joint is gone — replaced by a single, continuous, coated surface that the staff can hose, mop, and disinfect without driving water into the building structure.

More importantly, the underlying cause of the failure is solved. There is no longer a path for cleaning water to reach the sheetrock, which means no more hidden water damage building up behind the wall, no more biological growth in an unreachable corner, and no more recurring health-code findings on the same area.
